Moist & Easy Chocolate Chip Cookies
The secret to these extra-moist cookies is pudding mix! Try it with vanilla or chocolate! Recipe by Family Spice
Ingredients:
- 1 tsp baking soda
- 1/8 tsp salt
- 3/4 cup brown sugar, light
- 1 cup butter, unsalted, softened
- 2 eggs, large
- 2 1/4 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 TBS vanilla extract
- 1 cup walnuts, chopped (optional)
- 2 cup chocolate chips, semi-sweet
- 3 1/2 oz box of vanilla instant pudding mix
Instructions:
- Preheat oven to 350ºF.
- Using a stand mixer, whisk until creamed (light yellow in color):
- 1 cup butter, unsalted , softened
- 3/4 cup brown sugar, light
- 1/4 cup granulated sugar
- Mix in until well blended:
- 3 1/2 oz box of vanilla instant pudding mix
- Stir in:
- 2 eggs, large
- 1 TBS vanilla extract
- In a separate bowl, whisk together:
- 2 1/4 cup all-purpose flour
- 1 tsp baking soda
- 1/8 tsp salt
- In batches, mix dry ingredients into wet until fully incorporated.
- Using a scraper, fold in:
- 2 cup chocolate chips, semi-sweet
- 1 cup walnuts , chopped (optional)
- Drop cookies by rounded spoonfuls onto ungreased baking sheet or line baking sheet with parchment paper for easy removal.
- Bake for 10-12 mins, or until golden brown.
- Let cookies rest in the baking sheet for one minute, then using a spatula place onto a cooling rack to cool completely.
