Moist & Easy Chocolate Chip Cookies

The secret to these extra-moist cookies is pudding mix! Try it with vanilla or chocolate! Recipe by Family Spice

Ingredients:

  1. Preheat oven to 350ºF.
  2. Using a stand mixer, whisk until creamed (light yellow in color):
    • 1 cup butter, unsalted , softened
    • 3/4 cup brown sugar, light
    • 1/4 cup granulated sugar
  3. Mix in until well blended:
    • 3 1/2 oz box of vanilla instant pudding mix
  4. Stir in:
    • 2 eggs, large
    • 1 TBS vanilla extract
  5. In a separate bowl, whisk together:
    • 2 1/4 cup all-purpose flour
    • 1 tsp baking soda
    • 1/8 tsp salt
  6. In batches, mix dry ingredients into wet until fully incorporated.
  7. Using a scraper, fold in:
    • 2 cup chocolate chips, semi-sweet
    • 1 cup walnuts , chopped (optional)
  8. Drop cookies by rounded spoonfuls onto ungreased baking sheet or line baking sheet with parchment paper for easy removal.
  9. Bake for 10-12 mins, or until golden brown.
  10. Let cookies rest in the baking sheet for one minute, then using a spatula place onto a cooling rack to cool completely.
