Egg Nog Drop Sugar Cookies
Enjoy holiday egg nog with these irresistible and moist sugar cookies. Recipe adapted from The Cooking Photographer
Ingredients:
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup butter, unsalted, softened
- 1/2 tsp cinnamon, ground
- 2 cup all-purpose flour
- 1/4 tsp nutmeg, ground
- 1 cup granulated sugar
- 1 egg, large
- 1 1/2 tsp vanilla bean
- 1/4 cup egg nog, full fat
Instructions:
- Preheat oven to 350ºF.
- In a medium-sized bowl whisk together:
- 2 cup all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/4 tsp nutmeg, ground
- Using a stand mixer with paddle attachment, mix until creamed (light yellow in color):
- 1/2 cup butter, unsalted , softened
- 1 cup granulated sugar
- Add to the butter mixture and stir in:
- 1 1/2 tsp vanilla bean
- 1 egg, large
- 1/4 cup egg nog , full fat
- Put mixer on low speed, gradually add flour mixture and beat until just combined.
- Scoop one tablespoon of batter and drop on baking sheet lined with parchment paper or silicone baking mat, approximately 2 inches apart.
- Sprinkle cookies with:
- 1/2 tsp cinnamon, ground
- Bake for 10 minutes, or until golden around the edges.
- Let rest for 2 minutes on baking sheet then move to cooling rack.
- Store in airtight container for up to 1 week.
