Apple Surprise
This great apple bar recipe shows you the versatility of a simple box of cake mix! Recipe adapted from Ernest Wilford, Sunday Night Football Cookbook
Ingredients:
- 1/2 cup almonds, coarsely chopped
- 1/2 cup brown sugar, light, packed
- 1/3 cup butter, unsalted, softened
- 1 tsp cinnamon, ground
- 1 cup sour cream
- 1 tsp vanilla extract
- 2 egg, large
- 1 box of yellow cake mix
- 21 oz apple pie filling
Instructions:
- Preheat oven to 350ºF.
- In a large bowl using an electric mixer, beat together:
- 1 box of yellow cake mix
- 1/3 cup butter, unsalted , softened
- 1 egg, large
- Press into an ungreased 9" x 13" baking pans.
- Spread evenly over the top of cake mix layer:
- 21 oz apple pie filling
- In a small bowl, mix together:
- 1/2 cup brown sugar, light , packed
- 1 tsp cinnamon, ground
- 1/2 cup almonds , coarsely chopped
- Sprinkle almond mix over the apple layer.
- In a separate bowl, whisk together:
- 1 cup sour cream
- 1 egg, large
- 1 tsp vanilla extract
- Pour over the brown sugar mixture.
- Bake for about 50-60 minutes, or until toothpick inserted in the center comes out clean.
- Cool completely on a wire rack, cut into squares and serve.
