Doughnut Muffins
This wonderful muffins taste just like a doughnut, except they are baked and not fried Recipe adapted from Jennifer Donovan, Brunch • The Perfect Weekend Treat
Ingredients:
- 3/4 TBS baking powder
- 1/4 tsp baking soda
- 1/8 tsp salt
- 6 oz butter, unsalted, softened
- 2 TBS butter, unsalted, melted
- 1 tsp cinnamon, ground
- 2 eggs, large
- 2 1/2 cup all-purpose flour
- 1 cup milk
- 1/2 tsp nutmeg, ground
- 1 1/2 cup granulated sugar
Instructions:
- Preheat oven to 350ºF and apply non-stick spray to a 12-cup muffin pan.
- In a large bowl sift:
- 2 1/2 cup all-purpose flour
- 3/4 TBS baking powder
- 1/4 tsp baking soda
- 1/8 tsp salt
- 1/2 tsp nutmeg, ground
- Using a stand mixer, whisk and cream until light and fluffy:
- 6 oz butter, unsalted , softened
- 1 cup granulated sugar
- Add to the butter mixture one at a time:
- 2 eggs, large
- In batches, gently fold in dry ingredients into butter mixture alternating with:
- 1 cup milk
- Mix until blended thoroughly.
- Divide batter evenly into the prepared muffin pan and bake in oven for 15-20 mins. or until the muffin tops are lightly brown and firm to the touch.
- Let the muffins rest in the pan for 5 mins., then turn out onto a cooling rack to cool.
- For the topping, mix together:
- 1/2 cup granulated sugar
- 1 tsp cinnamon, ground
- While the muffins are still warm from the oven, brush tops lightly with:
- 2 TBS butter, unsalted , melted
- Press top of muffin into sugar mixture.
- Serve warm or cold.

Serving Suggestions: You can also add a sugar glaze to the top of each muffin, just mix 1/2 cup powdered sugar with 1 1/2 TBS of milk. For a chocolate glaze, mix 2 TBS cocoa powder with 1/2 cup powdered sugar. Than whisk in 2-3 TBS of milk.
