Doughnut Muffins

This wonderful muffins taste just like a doughnut, except they are baked and not fried Recipe adapted from Jennifer Donovan, Brunch • The Perfect Weekend Treat

Ingredients:

Instructions:

  1. Preheat oven to 350ºF and apply non-stick spray to a 12-cup muffin pan.
  2. In a large bowl sift:
    • 2 1/2 cup all-purpose flour
    • 3/4 TBS baking powder
    • 1/4 tsp baking soda
    • 1/8 tsp salt
    • 1/2 tsp nutmeg, ground
  3. Using a stand mixer, whisk and cream until light and fluffy:
    • 6 oz butter, unsalted , softened
    • 1 cup granulated sugar
  4. Add to the butter mixture one at a time:
    • 2 eggs, large
  5. In batches, gently fold in dry ingredients into butter mixture alternating with:
    • 1 cup milk
  6. Mix until blended thoroughly.
  7. Divide batter evenly into the prepared muffin pan and bake in oven for 15-20 mins. or until the muffin tops are lightly brown and firm to the touch.
  8. Let the muffins rest in the pan for 5 mins., then turn out onto a cooling rack to cool.
  9. For the topping, mix together:
    • 1/2 cup granulated sugar
    • 1 tsp cinnamon, ground
  10. While the muffins are still warm from the oven, brush tops lightly with:
    • 2 TBS butter, unsalted , melted
  11. Press top of muffin into sugar mixture.
  12. Serve warm or cold.

Serving Suggestions: You can also add a sugar glaze to the top of each muffin, just mix 1/2 cup powdered sugar with 1 1/2 TBS of milk. For a chocolate glaze, mix 2 TBS cocoa powder with 1/2 cup powdered sugar. Than whisk in 2-3 TBS of milk.
