Gluten-Free Breakfast Bars
Need a break from sugar? Here is a healthy and delicious breakfast bar, sweetened with Agave Nectar, and will give you plenty of energy in the morning. Recipe adapted from Elana's Pantry
Ingredients:
- 1/4 tsp baking soda
- 1/2 cup coconut, unsweetened, shredded
- 1/2 cup pumpkin seeds, toasted, shelled
- 1/4 cup raisins
- 1/2 cup sunflower seeds, shelled
- 1 tsp vanilla extract
- 1 1/4 cup almond meal, blanched & finely ground
- 1/4 cup agave nectar
- 1/4 tsp kosher salt
- 1/4 cup almond slivers
- 1/4 cup grapeseed oil
Instructions:
- Preheat oven to 350ºF.
- In a large bowl combine:
- 1/4 cup grapeseed oil
- 1/4 cup agave nectar
- 1 tsp vanilla extract
- In a small bowl combine:
- 1 1/4 cup almond meal , blanched & finely ground
- 1/4 tsp kosher salt
- 1/4 tsp baking soda
- Stir dry ingredients into wet.
- Mix in:
- 1/2 cup coconut, unsweetened , shredded
- 1/2 cup pumpkin seeds, toasted , shelled
- 1/2 cup sunflower seeds , shelled
- 1/4 cup almond slivers
- 1/4 cup raisins
- Grease an 8" x 8" baking pan with grapeseed oil.
- Using a scraper or wet hands press the dough evenly into the baking dish.
- Bake at 350°F for 15-20 minutes, or until golden brown.
- Wait for bars to cool before cutting and serving.
