Gluten-Free Breakfast Bars

Need a break from sugar? Here is a healthy and delicious breakfast bar, sweetened with Agave Nectar, and will give you plenty of energy in the morning. Recipe adapted from Elana's Pantry

Ingredients:

  1. Preheat oven to 350ºF.
  2. In a large bowl combine:
    • 1/4 cup grapeseed oil
    • 1/4 cup agave nectar
    • 1 tsp vanilla extract
  3. In a small bowl combine:
    • 1 1/4 cup almond meal , blanched & finely ground
    • 1/4 tsp kosher salt
    • 1/4 tsp baking soda
  4. Stir dry ingredients into wet.
  5. Mix in:
    • 1/2 cup coconut, unsweetened , shredded
    • 1/2 cup pumpkin seeds, toasted , shelled
    • 1/2 cup sunflower seeds , shelled
    • 1/4 cup almond slivers
    • 1/4 cup raisins
  6. Grease an 8" x 8" baking pan with grapeseed oil.
  7. Using a scraper or wet hands press the dough evenly into the baking dish.
  8. Bake at 350°F for 15-20 minutes, or until golden brown.
  9. Wait for bars to cool before cutting and serving.
