Meat Loaf With Chorizo

A roll of Mexican chorizo is tucked in the center of this not-so-ordinary meat loaf. Recipe adapted from Emeril Lagasse, Prime Time Emeril: More TV Dinners from America's Favorite Chef

Instructions:

  1. Preheat oven to 350ºF.
  2. Apply non-stick spray to a large roasting pan.
  3. In a large bowl mix together until combined:
    • 1 lb ground beef
    • 1/2 lb ground pork
    • 3/4 cup onions , finely chopped
    • 1/2 cup green bell pepper , finely chopped
    • 2 TBS parsley, American , finely chopped
    • 2 garlic cloves , minced
    • 2 eggs, large
    • 1/2 cup breadcrumbs, seasoned
    • 1 tsp salt
    • 1/2 tsp black pepper, ground
  4. Pat half of the meat mixture into a rectangle about 9x4 inches onto the prepared roasting pan.
  5. Layer in the center of the rectangle:
    • 1/2 lb smoked chorizo sausage , casing removed
  6. Mold the remaining meat mixture around and over the chorizo to cover it completely.
  7. Pour over the meat loaf:
    • 1 cup chili sauce , *
  8. Bake in the over for 1 1/2 hours, basting occasionally with the pan juices.
  9. With a large spatula, carefully transfer the meat loaf to a serving platter and serve.
