Pomegranate Fudge

This easy fudge recipe is infused with the flavor of pomegranates, offering a slightly fruity fudge. Recipe by Laura Bashar of Family Spice

Ingredients:

  1. In a small pot bring to boil, then reduce heat to low and cook until reduced to 1/3 cup:
    • 2 cup pomegranate juice
  2. Place another small pot inside a larger pot filled partially with water to make a double boiler. In the top pot, add:
    • 2 TBS butter, unsalted
    • 14 oz sweetened condensed milk
    • 1 lb chocolate chips, dark
  3. Heat the pot over low heat to gently melt the chocolate, stirring constantly to prevent burning.
  4. When the chocolate is completely melted, thick and smooth, stir in the pomegranate concentrate.
  5. Line an 8x8-inch baking dish with foil and lightly grease the foil.
  6. Pour chocolate mixture into the prepared baking dish, gently tapping the dish to smooth out the fudge surface and to remove air bubbles.
  7. Sprinkle the top with:
    • 1/4 cup pistachios , shelled & chopped
  8. Refrigerate fudge for at least 4 hours to set.
  9. Lift the foil containing the fudge out of the pan and cut fudge into 1-inch pieces or desired other size.
  10. Dip your knife into a glass filled with hot water between slices if it is starting to stick to the fudge.
