Crispy Rice Bars with Pistachios & Honey

Here's a nutritious alternative to the marshmallow rice krispie bar. Recipe by Laura Bashar of Family Spice

Ingredients:

Instructions:

  1. Keep in the freezer for at least 3 hours prior to mixing:
    • 1/2 cup chocolate chips, bittersweet
  2. In a large bowl combine:
    • 3 cup puffed rice cereal
    • 1/4 cup cranberries, dried
    • 1/2 cup pistachios , shelled & chopped
    • 1/4 cup apricots, dried , chopped into 4 pieces
  3. In a small non-stick saucepan, whisk together and bring to boil:
    • 4 TBS butter, unsalted
    • 1/2 cup brown sugar, light
    • 1/4 cup honey
  4. Remove honey mixture from heat and pour into the rice mix, stirring often.
  5. Quickly stir in frozen chocolate chips until combined.
  6. Press rice mixture into a 9-inch baking pan that has been coated with non-stick spray.
  7. Refrigerate until set, about an hour.
  8. Cut bars into desired shape and serve.
