Plum Yogurt Cake
This moist cake is super easy to whip up, especially if you have a last-minute dinner guests on their way! Recipe by Family Spice
Ingredients:
- 2 tsp baking powder
- 1/8 tsp salt
- 1/2 cup vegetable oil
- 3 eggs, large
- 1 1/2 cup all-purpose flour
- 2 plums, sliced
- 3/4 cup granulated sugar
- 1 tsp vanilla extract
- 3/4 cup yogurt, plain
Instructions:
- Preheat oven to 350ºF.
- Apply non-stick spray to one 9-inch round cake pan and line the bottom with parchment or waxed paper.
- In a medium-sized bowl whisk together:
- 1 1/2 cup all-purpose flour
- 2 tsp baking powder
- 1/8 tsp salt
- In a large bowl, mix together until combined:
- 3/4 cup granulated sugar
- 3/4 cup yogurt, plain
- 3 eggs, large
- 1 tsp vanilla extract
- 1/2 cup vegetable oil
- In batches, mix flour mixture into yogurt mixture and stir until combined.
- Pour mixture into prepared cake pan.
- Arrange over the top of the cake:
- 2 plums , sliced
- Place the cake in the oven and cook for 40-45 minutes or until a toothpick inserted into the center comes out clean.
- Place the cake on a cooling rack and let it cool for 20 minutes prior to serving.
