Outrageous Coffee Brownies

So, it was one of those afternoons that I was cooking dinner with the Food Channel buzzing in the background. I was looking for inspiration between the hollering and fighting between the kidlets. Somewhere while chopping onions, I heard Ina Garten mention brownies? Did someone say BROWNIES? I quickly dropped my knife and plopped in front of the t.v. to watch.

Well, these aren’t your ordinary brownies. WOAH! They were fully loaded with chocolate and spiked with coffee. This, I told myself, I must try!

And try I did! One staff appreciation lunch at my children’s school popped up on my calendar. They needed a dessert! Hello Outrageous Coffee Brownies!

The batter was delicious and I was bouncing off the walls by the time my hubby came home. I realized these babies were a little bit much fuel for my kids, so I would only let them eat a bite-sized piece. I certainly didn’t want these guys going to bed at midnight!

The brownies were a hit at school. I think most of the staff at school found some energy (whether fueled by caffeine or sugar) to finish the day with a smile!

Outrageous Coffee Brownies

Rich and intense chocolate flavor. A must-have recipe for every brownie lover! Recipe adapted from Ina Garten

Ingredients:

  • 1 lb butter, unsalted
  • 1 lb chocolate chips, semi-sweet
  • 4 cup chocolate chips, semi-sweet
  • 6 oz chocolate, unsweetened
  • 6 eggs, extra-large
  • 1 TBS instant espresso, powder
  • 2 TBS vanilla extract
  • 2 1/4 cup granulated sugar
  • 1 1/4 cup all-purpose flour
  • 1 TBS baking powder
  • 1 tsp kosher salt
  • 3 cup walnuts, diced

Directions:

  1. Preheat oven to 350ºF.
  2. Grease 2 9" x 13" baking pans and set aside.
  3. In a double boiler, melt on medium to medium-low heat:
    • 1 lb butter, unsalted
    • 1 lb chocolate chips, semi-sweet
    • 2 cup chocolate chips, semi-sweet
    • 6 oz chocolate, unsweetened
  4. Cool slightly.
  5. In a large mixing bowl, mix together:
    • 6 eggs, extra-large
    • 1 TBS instant espresso , powder
    • 2 TBS vanilla extract
    • 2 1/4 cup granulated sugar
  6. Stir in the warm chocolate mixture and cool to room temperature.
  7. In a separate bowl, whisk together:
    • 1 cup all-purpose flour
    • 1 TBS baking powder
    • 1 tsp kosher salt
  8. Add to cooled chocolate mixture.
  9. In a small bowl, combine:
    • 3 cup walnuts , diced
    • 2 cup chocolate chips, semi-sweet
    • 1/4 cup all-purpose flour
  10. Add coated walnuts and chocolate chips to the chocolate batter.
  11. Pour into the prepared pans.
  12. Bake for about 30 minutes, or until tester just comes out clean.
  13. Cool thoroughly, refrigerate well and cut into squares.

Notes:

Serving Suggestions: The original recipe called for 3 TBS of coffee. We found this to be a bit strong for the light-hearted and so we eased it back to 1 TBS.

  1. Looks yummy! The recipe says to melt the chocolate using a double boiler. Can I use the microwave instead?

  2. You can microwave chocolate under certain conditions:

    First, the chocolate pieces are small.
    Second, you microwave the chocolate for 30 seconds at a time and then stir.

    If your chocolate chunks are big, you are risking burning the chocolate. And by melting the chocolate for 30 seconds, stopping, stirring and then melting again for 30 seconds, etc… you reduce the chance of burning your chocolate.

    A double boiler is easy to put together and safer when you are working with a big batch of chocolate chunks!
