A funny conversation occurred yesterday afternoon. My hubby had his monthly scout leader meeting at our house. I don’t attend as I am an unofficial volunteer (being married to the cubmaster), so I hover in the kitchen and listen. If I sit down, then I get sucked into the entire 2-hour meeting and I’ll probably walk away with more responsibilities than I already have. Unofficially, that is.
After the meeting, one of the dads saw me and said hello.
“I noticed you didn’t post any new recipes on Facebook last week,” he asked.
Yes, I have some scout dads as Facebook fans… what of it?
“Oh, did you miss all three of them?” I asked.
“Really? I didn’t remember seeing anything. Are you sure?”
“They weren’t dessert recipes this week. It was mostly quinoa.”
“Oh healthy stuff! Yeah, I must have skipped them!”
So, for those of you that need your sugar fix, I have a Lemon Blueberry Clafoutis for you.
What’s a clafoutis? It’s a French dessert that has a flan-like center. Typically made with cherries, I cheated and made it super easy with blueberries and lemons.
I made two last week. One for the school’s staff luncheon, one for a back-to-school pool party. Both were devoured.
Everyone needs a delicious sugar fix.
