Christmas Cookie Conundrum!

As a foodie, I love to cook for friends and family. And I especially love to give out homemade goodies as gifts. I know it may seem time consuming, but it beats fighting it out at the mall looking for that perfect gift. I know I would rather have a box of cookies, bark and fudge over a sweater any time!

Every Christmas Eve my husband and I host a big party for family and friends. And every Christmas Eve I give away boxes of treats. Sometimes I bag them up and put them in a gift basket with an assortment of fun items. Or, I find a festive plate and wrap the goodies up in that. Either way, it’s a holiday tradition for my family, and everyone is expecting these calorie-packed treats!

And today, I’m going to share with you three of my favorite cookies: the classic sugar cookie, the chocolate roll-out cookie and spumoni bars.

First, up, the classic sugar cookie (pictured above). I know, I know, what’s so special about that? Well, this cookie is very versatile. As a roll-out cookie, you can cut it into any shape you want. And this particular recipe is not overly sweet. So if you eat it plain, you’ll taste a mild, vanilla flavor. And, if you frost it, you won’t be overpowered from too much sugar. Now, sugar cookies are fine, but what if you are a chocoholic? I know, there are tons of chocolate cookie recipes out there. BUT, there aren’t that many that you can roll out and cut into any shape you want, just like a sugar cookie. Here it is, the chocolate roll-out cookie. With a hint of cinnamon, this cookie has Christmas written all over it! Again, a great cookie tastes great plain or frosted, and that’s the truth for this one. My kids couldn’t stop eating them!! Chocolate or vanilla? Chocolate or vanilla? It’s one of the greatest dilemma’s of our time! It’s right up there with dog versus cat! Well, these spumoni bars will take care of the chocoholics and the vanilla-freaks in your house. AND, add a little cherry in the mix, and you’ve got one fantastic cookie.
