If you haven’t noticed, I’m not a baking blog. I do not have the time, patience or stamina to decorate a cake like some of those great baking blogs do. If you want me to direct you to some mind-blowing dessert divas, let me know. Like most projects I start, I have the best intentions in the beginning, I think through all of my ingredients and steps, and I’m super pleased (and sometimes taken by surprise) by the fabulous outcome. But, I hate, I absolutely hate prepping the darn masterpiece up for it’s close-up, that final glamour shot for foodies.

This was the candy shop kit kat ice cream birthday cake I made for Middle-Child.

He turned 8.

He requested an ice cream cake.

I delivered.

But how do you tell 20 or so family members to wait for their cake?

I mean, I take the before you cut-into-the-cake shot. We sing “Happy Birthday!” We cut and pass out 2 slices.

Then I tell the guests to wait for it.

I need a shot of the cake with it sliced open.

It’s bad enough that not all of the kids have gotten a slice of cake. Those that do not, are hovering over me like gnats. I swat them away, they return with a vengeance.

But, the adults are just as impatient. I’ve been doing this for over 2 years. You’d think they’d be used to me photographing everything before they eat it!

And what does my beloved family do? They snicker and make jokes behind my back, and sometimes in front of it. My husband barks at me to relax and take my time. My daughter whines for her slice.

I can’t handle the pressure. I grumpily snap away random pictures. I don’t notice the details, the dripping ice cream, the wrinkled fabric, the bad lighting at 9-o’clock at night.

Was it centered? Should I stick a flower there? A balloon? Oh look, an M&M;! Will anyone notice me eating it?

AAAAARGH!!!!

What’s a food blogger to do?

I quickly finished, prayed for a good shot and dove into a slice of cale, that’s what. It’s loaded up with an oreo crust, a kit-kat border, two cookie and chocolate jewelled ice creams, topped with whipped cream, more oreos, mini M&M;’s and whoppers (my personal private addiction).

Candy Shop Ice Cream Cake

This Kit Kat Ice Cream Cake is the ultimate birthday cake to WOW the kids. It's even a terrific frozen treat to cool off from the heat. Recipe by Laura Bashar of Family Spice

Ingredients:

  • 2 qt ice cream, any 2 flavors
  • 2 TBS milk
  • 39 kit-kat candy bars
  • 16 oz whipped topping, frozen (like cool whip)
  • 30 oreo cookies, broken up
  • 1/4 cup chocolate candies, assortment

Directions:

  1. Remove from the freezer and leave on the counter:
    • 2 qt ice cream , any 2 flavors
  2. In a food processor combine:
    • 2 TBS milk
    • 24 oreo cookies
  3. Coat a 9-inch spring form pan with nonstick spray and place upright all around the side of the pan:
    • 39 kit-kat candy bars
  4. Try to get the kit-kat bars as close to possible as you can, with the kit-kat name facing out, against the side of the spring form pan.
  5. Line the bottom of the pan with parchment paper and press the oreo mixture evenly over it.
  6. Place in the freezer for 10 minutes.
  7. Stir the first flavor of softened ice cream in its container and press evenly over the oreo crust.
  8. Place in the freezer for 10 minutes
  9. Stir the second flavor of softened ice cream in its container and press evenly over the first ice cream layer.
  10. Place in the freezer.
  11. Remove from the freezer and allow to thaw for 30 minutes:
    • 16 oz whipped topping, frozen (like cool whip)
  12. Spread whipped topping over the top layer of ice cream and garnish with:
    • 6 oreo cookies , broken up
    • 1/4 cup chocolate candies , assortment
  13. Return cake to the freezer and allow to set overnight.
  14. Remove cake from freezer 10 minutes prior to serving.
  15. Gently open the spring form pan and remove. Use a thin knife or spatula to slide cake onto serving platter.
  16. Slice & serve immediately!
