Red, White & Blue Poke Cake

Cut inside this cake and you will see delicious veins of red & blue Jello! Recipe by Laura Bashar of Family Spice

Ingredients:

Instructions:

  1. Preheat oven to 350ºF and coat 2 9-inch or 8-inch round cake pans with non-stick spray. Line the bottom of each pan with parchment paper.
  2. Follow directions and make cake for:
    • 1 box of white cake mix
    • 1 1/4 cup water , *
    • 1/3 cup vegetable oil , *
    • 3 egg whites , *
  3. Bake for time stated on package directions.
  4. Remove cakes from oven and allow to cool in the pans for 15 minutes.
  5. Bring to boil:
    • 2 cup water
  6. Divide water evenly into two different bowls, then stir in one flavor to each bowl:
    • 3 oz jello, blue
    • 3 oz jello, red
  7. Stir until gelatin is completely dissolved.
  8. Pour the blue jello mixture slowly and evenly over the entire top of one cake round. Repeat with red jello and other cake round.
  9. Place cake rounds in the refrigerator and chill for 3 hours.
  10. To assemble cake, remove one cake round from the pan and place on your serving platter. Frost with:
    • 16 oz frosting, white , **
  11. Place second cake round over the frosted one and finish frosting.
