Sundried Tomato Hummus

Sundried Tomato Hummus

Sweet marinated sun-dried tomatoes paired with ordinary hummus makes for an extra-ordinary dip. Recipe by Laura Bashar of Family Spice

Ingredients:

Instructions:

  1. Purée until smooth in a food processor:
    • 15 oz garbanzo beans, canned , drained
    • 6 oz oil packed sun-dried tomatoes , including oil
    • 1/3 cup tahini
    • 3 garlic cloves
    • 1/4 cup lemon juice
    • 1/2 tsp salt
    • 1/8 tsp black pepper, ground
  2. Spread hummus into a shallow serving bowl and garnish if you choose with:
    • 1 TBS oil packed sun-dried tomatoes , chopped
  3. Serve chilled or at room temperature.
