White Chicken Chili

Chili isn't just for tomatoes and beef! This white chili features chicken and sour cream. Recipe by Laura Bashar of Family Spice

Ingredients:

Instructions:

  1. In a large bowl, cover with water:
    • 30 oz great northern beans, canned , drained
    • 30 oz kidney beans, canned , drained
  2. Under medium-high heat, heat an 8-quart stock pot and saute:
    • 1 TBS butter, unsalted
    • 4 garlic cloves , minced
    • 1 large onion , chopped
    • 1 red bell pepper , chopped
    • 1 anaheim chile , chopped
  3. When vegetables have softened, about 5-7 minutes, add:
    • 2 1/2 qt chicken broth
    • 1/2 cup lime juice
    • 3 cup chicken, cooked , shredded
  4. Drain beans from water and add to the chili.
  5. Bring to a boil over medium-high heat.
  6. Cover, reduce heat, and simmer for 1 hour.
  7. Stir in:
    • 1 bunch cilantro, fresh , chopped
    • 1 TBS chile powder
    • 1 tsp salt
    • 1 tsp cumin
  8. Bring to a boil over medium-high heat.
  9. Reduce heat, and simmer uncovered for 1 hour.
  10. Right before you serve, remove from heat and stir in:
    • 1 cup sour cream
