Grape Kool-Aid Cupcakes

Sometimes you just have to throw caution to the wind and have fun. These cupcakes scream giggles, games and care-free times! Recipe by Laura Bashar of Family Spice

Ingredients:

Instructions:

  1. Preheat oven to 350ºF and line a 24-cup muffin pan with liners.
  2. In a large mixing bowl, whisk together:
    • 1 box of white cake mix
    • 1/2 cup kool-aid drink powder , grape flavor
  3. Follow directions and whisk in:
    • 1 1/4 cup water , *
    • 1/3 cup vegetable oil , *
    • 3 egg whites , *
    • 2 drops of red food coloring , (or as many drops as needed to get to desired purple)
  4. Divide batter evenly into the prepared muffin pan and bake in the oven for 20 mins., or until a toothpick inserted in the center of the cupcake comes out clean.
  5. Let the cupcakes rest in the pan for 5 mins., then turn out onto a cooling rack to cool completely.
  6. When ready to frost the cupcakes, whisk together:
    • 1 cup butter, unsalted , room temperature
    • 3 TBS heavy cream
    • 4 cup powdered sugar
    • 1/4 cup kool-aid drink powder , grape flavor
    • 1 drop of red food coloring , (or as many drops as needed to get to desired purple)
  7. Frost cooled cupcakes as desired. Cupcakes pictured were frosted with Wilton tip #12.
  8. Refrigerate cupcakes until ready to serve.
