Easy Chicken Tortilla Soup

Using salsa as your secret ingredient, you get all the flavor of this delicious soup in half the time. Store-bought rotisserie chicken also helps reduce your cooking time. Recipe by Laura Bashar of Family Spice

Ingredients:

  1. Heat a large stock pot on medium-high and add:
    • 1 tsp extra virgin olive oil
  2. Add to the hot oil:
    • 1/2 cup onion , chopped
  3. Cook until softened, about 3 minutes, and then add:
    • 3 garlic cloves , minced
    • 1/4 cup cilantro, fresh , diced
    • 1 jalapeño pepper , cored, seeded & diced
  4. Cook 2 more minutes then season with:
    • 1 tsp salt
    • 2 tsp cumin
    • 1/4 tsp chile powder , optional
  5. Stir in:
    • 28 oz diced tomatoes, canned , with juice
    • 2 TBS tomato paste
    • 1/4 cup lemon juice
    • 5 cup chicken broth
    • 1 1/2 cup salsa , chunky
  6. Simmer soup for 20 minutes.
  7. Stir in:
    • 3 cup cooked chicken , shredded or chopped
  8. Cook 10 more minutes and serve.
