Summer Munchies: The Avocado BLT

Step up your summer sandwich with the Avocado BLT: creamy avocados, sweet summer tomatoes, salty bacon and peppery arugula.

Some people insist that everything tastes better with bacon. I must admit, bacon does add a nice dimension to many great meals. But I like to say that everything tastes better with avocados. It might be because I live in California and one of my good friends is an avocado farmer (go say hi to Mimi!). But, in all honesty, there’s not much that I haven’t enjoyed eating after I topped it with some fresh avocados.

Avocados are delicious on omelettes, sandwiches, soups and salads. My personal favorite way to enjoy an avocado is straight of the skin with a spoon and some lemon juice. Deeeelicious!

A coworker of my husband’s has an avocado tree, so lately hubby has been coming home with a bag or two full of a dozen or more avocados. Rough life for me.

The California Avocado Commission then sent me a flat of avocados to enjoy, too. So my family and I have been happily swimming in green goodness in everything we eat.

I added some creamy avocado slices to my BLT – what a perfect match with the sweet tomatoes, the salty bacon and the peppery arugula.

In the past I have added eggs to my BLT, so why not avocados?

Avocado BLT

Creamy avocados pair beautiful with sweet summer tomatoes, salty bacon and peppery arugula. Recipe by Laura Bashar of Family Spice


  • 1/2 lb bacon
  • 2 kaiser rolls
  • 1 TBS mayonnaise
  • 2 oz arugula
  • 1 heirloom tomatoes, sliced
  • 1 avocado, sliced
  • 1 tsp lemon juice


  1. Heat a large skillet over medium high heat and add:
    • 1/2 lb bacon
  2. Cook until both sides of bacon are cooked and crispy, approximately 5 minutes. Transfer to a plate lined with paper towels to cool and remove the excess grease.
  3. Cut open:
    • 2 kaiser rolls
  4. Toast bread, if desired then spread inside the buns with:
    • 1 TBS mayonnaise
  5. Start layering into the bread:
    • 2 oz arugula
    • 1 heirloom tomatoes , sliced
    • Add bacon over the tomatoes.
  6. Top with:
    • 1 avocado , sliced
  7. Drizzle over the avocado with:
    • 1 tsp lemon juice
  8. Place the top half on your sandwich and serve.


Serving Suggestions: Add some fresh basil or tarragon for more zing and flavor.

Cooking Tips: Vary the bread by using a baguette, ciabatta or even a pretzel bun (pictured above)
