I find myself doing a lot of volunteering, whether I volunteered myself or simply because no one else would do it. Don’t even mention the stuff my husband volunteers me for! Luckily, my community and my children’s school is filled with wonderful teachers, staff and of course, volunteers. I, personally, like to work in my kids’ classrooms to see how they interact with others, to see how they work and of course, to check up on the teachers!
Every other month our PTA hosts a staff appreciation luncheon. The meals are usually themed and they are all put together by volunteers. My friends organize these marvelous lunches, and every year they diligently hunt down the bakers and cooks they know and we quickly sign up for the different items we want to make or bring.
I admit, during the busy holidays I will sign up for something easy, like shredded cheese or a bag of rolls. But, for the most part, I make something.
For our first staff luncheon, the theme was Italian and I brought in a pasta dish. I went vegetarian and developed this Asparagus Pesto with Lemon & Mint. Pesto isn’t for just basil and pine nuts! The sauce was creamy and tangy. The dish still reminded me of summer, which is officially over. Yesterday, September 21st, was the first day of Fall.
So bring on the pumpkins, apples and pears. We have school Halloween parties to plan and goodies to bake.
